Rotini noodles
Cucumber
Grape tomatoes
Red bell pepper
Red onion
Kalamata olives
Chickpeas
Feta cheese
Fresh parsley
Greek dressing:
1/2 cup olive oil
1/4 cup water
3 tbsp red wine vinegar
2 tbsp lemon juice
3-4 tbsp honey
1 tsp dijon mustard
2 garlic cloves minced
1 tsp dried oregano
1 tsp dried dill
1/2 tsp salt
1/4 tsp black pepper
Boil and cool noodles. Chop veggies and mix with pasta.
In a container, add all dressing ingredients. Shake well to combine.
Pour dressing over pasta and vegetables, toss to combine.
